I'm wondering this too. I have 38 hearts and 3 full stamina wheels. All shrines plus heart containers from 6 bosses and an extra heart container from a side quest. It's possible there are other side quests that give heart containers but if so I don't think it's been documented well yet.You can get 28 hearts and full stamina or all 30 hearts and almost all the stamina with dlc, so with out dlc your 12 spirit orbs away from Max and with dlc you are only 8 spirit orbs away from max.
